[Food] Dormitory Dining

So I asked a friend of mine, Shadowdancer, who have a recipe blog (but you needed to sign up to read them), to make a set of recipes for someone like me ^___^ Here’s a copy paste of her entry:

One of my friends, Terri, asked me to come up with recipes for someone who lives in a dormitory, has no fridge, microwave or toaster oven, but has only a rice cooker with a steamer tray with which to prepare food, and can’t keep perishables. These are geared toward single person meals that will hopefully have no leftovers, or serve as a single pack lunch that can be taken to work.

Speaking of work, I better get to it! This is late as it is, since my RL work decided to eat away all my free time. Mea culpa…

Assume that I’m having these recipes either steamed in a foil packet, or a small, covered ceramic dish, unless I state otherwise.

1) Steamed Tofu With Vegetables

1 block tofu
Sprouted mung beans (about a handful or two)
1 small tomato, sliced
1/2 tablespoon Silver Swan, or Maggi Seasoning / Savor to taste
1-8 to 1/4 cup water
1-2 spring onions, chopped.

Slice the tofu into smaller pieces. On foil, layer the tomatoes and bean sprouts and top with the tofu. Sprinkle with spring onions, season, add very little water, and seal. Place in steamer tray and cook with rice being steamed. Enjoy as rice topping.

2) Chicken Nuggets Afritada

Chicken nuggets
Mama Sita’s Afritada Sauce, small packet size
1 small carrot, peeled and chopped small
1 small potato peeled and chopped small
1 small onion

Layer the carrots, onions and potatoes at the bottom. Place meat on top of the vegetables and pour the sauce on top. Steam while cooking your rice.

3)Chicken Breast Fillet Strips Adobo

1-2 chicken breast fillets, cuts into strips
1 small packet Mama Sita’s Adobo Mix
1-2 small potatoes

Prepare Mama Sita’s mix as directed. Layer potatoes with chicken breast fillet strips and add the adobo mix. Steam with rice, and enjoy.

4)Hamburger Patties with Mang Tomas and Mushroom Sauce

1-3 hamburger patties
1/4 cup Mang Tomas sarsa (or gravy)
1-3 fresh mushrooms, stems removed and washed, sliced into strips
1 small onion, sliced fine
1/8 cup water

Layer onion on bottom, top with patties, layer mushrooms on top and then cover with gravy and water. Steam with your rice.

5)Cream Dory Fillet With Sweet Oriental Sauce

Cream Dory fillet – 1 small
1 small piece of ginger, 1 cm worth, sliced fine.
1-2 tablespoons Kikoman soy sauce (no substitutes!)
3 tablespoons brown sugar
1 small leek, sliced
2 spring onions, chopped.

Mix Kikoman and sugar together till sugar is dissolved. Mix chopped vegetables together. Place a layer and then put the Cream Dory fillet on top of the vegetables. Top with remaining vegetables, soy sauce mix and water. Steam at the same time you are cooking your rice.

6)Chicken Breast Fillet Strips Royal

Royal, in this case, is the orange soda drink marketed in the Philippines by Coca Cola. Try using other orange soda drinks if you don’t have Royal at hand.

1 whole chicken breast fillet, marinated in Royal soda for 10-15 minutes.
Spring onions, chopped
a pinch of salt

In your steaming dish of choice, pour the breast fillet with the marinade into the dish. Top with spring onions. Dissolve salt in a little more soda and pour over the chicken. Steam with your rice. Top with mandarin orange wedges before serving.

note: you can do this with pineapple juice as well, and pieces of pineapple.

7) Steamed Fritata

I got this idea while eating a quiche.

1 small egg
pinch of salt
1/4 cup milk or cream
1 small tomato, sliced
1 small onion, sliced fine
some melting cheese, to taste
a slice of ham, sliced into smaller pieces (or any sausage meat you might have on hand)

Scramble egg, salt and milk/cream together. In ramekin, arrange your vegetables, cheese and ham. Pour egg over the whole thing and steam for 15 – 20 minutes or til firm. Let sit for 5 minutes before eating.

This is a recipe whose end product will not keep for very long, so it isn’t adviseable to make this for a packed lunch/bento.

Bonus Recipe

Steamed Banana Pudding

1 large banana, sliced
1-2 slices bread, shredded
1/4 cup condensed milk
1/8 cup melted butter
Brown sugar for topping

Line bottom of ramekin with bread, pour condensed milk on top. Layer banana slices and top with butter. Sprinkle brown sugar on top and steam for 10-15 minutes.
